新煮意﹣3-tiers Appetizer Tower

這周未Mr.J邀請了四位好友來我們家吃晚飯,做六人份量的菜本不是難事,但Mr.J卻又同時答應先和他們去攀岩然後再來我們家吃飯。Mr.J是個運動狂,在他眾多運動嗜好中,我就獨愛攀岩,其他的我都興致缺缺的。可是準備晚餐須時,怎可能攀岩後回來立刻開飯呢,我說要不我留在家準備晚餐好了,可是Mr.J卻又執意要我一起去。正當想改成在外面吃時,剛好看到餐枱上放著剛拆開,友人送的結婚禮物,便想到可先做個三層的前菜,好讓他們邊吃邊等。

這個骨瓷三層蛋糕架是屬於澳洲品牌Ashdene的‘Tree of Life Collection’系列,結婚禮物中這是我至愛之一。上面的圖案十分精緻,而且骨瓷都是簿簿的,用的時候真的很怕會碰壞,所以都是在宴客時才會用得上。

其實早前為了婚禮的Candy Corner,也在淘寶買了一個三層蛋糕架,手工和質量當然不能和品牌的出品相比,但看起來也滿漂亮的,日常粗用是一個不錯的選擇。

這三款小吃都是準備工夫不多,而且十分方便的選擇。最上層的是Grill Shrimps,中層的是Hummus with Chips,最下層的則是Avocado Toast with Tomatoes。Hummus和Chips都只是在超市買現成的,要準備的其實只有Grill Shrimps和Avocado Toast。攀岩回來後只用了不夠十分鐘,這個3-tiers Appetizer便可以上枱了。

 Grill Shrimps

  • 18 uncooked shrimps 
  • 2 large garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  1. Place minced garlic, salt, pepper, lime juice, and olive oil; in a large bowl.
  2. Peel and devein the shrimp, leaving the tails on. Place deveined shrimp in the large bowl. Toss shrimp with the lime marinade for 3 minutes.
  3. After marinating the shrimp and ready to cook, place the marinated shrimp onto the hot grill (You can pan fried them if you don't have a grill) and cook approximately 3-5 minutes.
  4. Put together with cherry tomatoes and sliced pineapple.

Avocado Toast with Tomatoes
  • 1 small baguette
  • 1 ripe avocado
  • 1 tomato, quartered
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  1.  Slice baguette diagonally into 1/2-inch-thick slices, put into toaster
  2. Halve avocado lengthwise and remove pit; scoop flesh into a small bowl. 
  3. Mash with lemon juice; season with salt and pepper. 
  4. Spread on toasted bread and top with tomatoes.
